I use Outlook - I have access to features outlook express doesn't have like a Calendar that I can do meeting, appointments, reminders on , I have task folders so that I can keep on top of business stuff and personal stuff, it has an automatic backup system for emails, can have multiple address books ... and other funtions that you don't get with outlook express.
Windows email is the Vista version of outlook express, I think it's more security focused but other than that I don't know too much about Windows email - oh I heard you can't use web based emails (like hotmail, yahoo, gmail) through it - you can add these in Outlook.
I guess you really need to weigh up what you would use it for - if you plan to utilise calenders, tasks, reminders, meeting schedules and other features then Outlook would be the way to go ... if you plan on using it to send and receive mail only then Windows Email (Outlook Express).
Every Morning when I open Outlook I have a page that displays first where I can see any meetings I have, any tasks due, any payments to be made, any followups etc I need to do, I can also see what new messages if any I have - I love Outlook I use it for everything!!

You should use either MS Outlook (comes with MS office)
or Thunderbird (free/open source) http://www.mozilla.com/en-US/thunderbird/
They are the best.
Thunderbird is the companion to Firefox, just like Outlook and Internet Explorer.
