ok I was reading the post on what's for dinner tonight and I was thinking we are all very busy people, so how about a recipe swap, put your favourite recipe up for everyone to see, who knows we may all get a heap of recipe's that we can try, here is mine
Egg and Bacon Pie
Preparation time 10 minutes
Cook time 35 minutes
Serves 4 - 6
Ingrediants -
250g cream cheese
125g cold butter
1 1/2 cups plain flour
1/4 tsp dried thyme or basil (optional )
extra flour for dusting
8 rashers of bacon trimmed ( short cut is best )
6 eggs
4 spring onions finely chopped
Method
pre heat oven to 200oC
lightly greasea pie dish and dust with flour, roughly chop the cream cheese, place in microwave container and heat on high for 1 1/2 mins, grate butter add to cream cheese mix then add flour and herbs, work to form a pastry ball, set aside 1/3rd of the pastry, press the remaining pastry into your pie dish prick the surface bake for 12 -13 minutes until crisp and golden. arrange the bacon over the pastry base and carefully crack the eggs (leaving whole) over the top of the bacon scatter the spring onion. roll the remaining pastry then cut into strips, place the strips over the pie in a crisscross pattern. bake for 25 minutes. serve with chips and salad, yummy cold too.

by the way the first time I made it, it took probably close to 20 minutes to prepare but now after cooking it several times I no longer need to read the recipe and it only takes about 5 to prepare
