Just wondering what's for tea at your house tonight?

At ours we are having potato & leek soup (I uploaded recipe for anyone interested - really easy to make) and multigrain bread.

What is everyone else having?

Today I think we'll start with homemade pumpkin soup, followed up with roast chicken with homemade  spinach and riccotta parcels & mixed vegies. they can make their own dessert

it a sad sign of the times isn't it when everyone has to mention that something was homemade as opposed to store bought. Maybe its cos I'm from the country but just about everything we eat is home made. Things like bread, jam, soups etc etc are all home made... Things lie cordial soft drink, etc are store bought.
Its not as if i have no life or anything. In fact I'm at school full time, I do a couple of parties a week and like to go out at least once a week.
So how do i do it? Well generally of a Sunday I'm in the kitchen most of the day... Thats when i make the bread and what ever else for the coming week I love the freezer!!! Meals during the week is a semi elaborate affair depending on what the kids (my younger sister and and house mate) and my grandmother feel like.
I suppose its more of a lifestyle than anything else. We all pitch in and help out. Its just i like to know what goes into everything I'm putting into my body.

Melinda replied:

Well I think it'll be spag bol tonight

i get sick of trying to think of something different.

Although Marina's chicken recipe looks good.

Lilygirl_wytch replied:

Here's a quick recipe with a BBQ chook

Chicken filo pie

1 bbq chook shredded

1 to 2 cups of frozen peas, corn and capsicum

1leek finely sliced

1/2 doz bacon rashes finely chopped

tin of asparagus (if you like it, otherwise leave it out)

1 tin of cream of chicken soup

mushrooms finely sliced.

puff pastry (of course)   and some sour cream

Now for the boring stuff:  Cook the leek, and bacon till just the way you like it, add chicken, mushrooms, soup and frozen vege's.  Simmer till vege's are tender, stir through some sour cream to the consistency you like.

Pour into an oven proof dish ( like a lasagne tray) Top with sheets of filo (spray with cooking spray in between layers. Pop into a medium to Hot oven till puff pastry is golden and puffed.

Serve with a salad or Mashed potatoes ( I serve with colcannon) and hog in!

Takes about 35 minutes!

bon apatite!
